I had tickets to come here on a previous trip to Las Vegas that got cancelled, so é by José Andrés has been on my radar for a while now. Located in a private room in Chef Andrés’ restaurant at the Cosmopolitan, Jaleo, é is a chef’s counter format with just 9 seats. The menu is Spanish influenced and the experience is a bit of a show, with all courses being plated live in front of the guests at the counter.

Guests are invited into the “mind” of Chef Andrés as the menu is designed by him personally. The evening is a rapid fire experience of 21+ courses in a very well organized and choreographed experience. Here is what I had for dinner on October 8, 2025:

I’ve read some mixed things about é and of course got a few messages on social media about my thoughts. Broad stroke… I enjoyed the experience. I think most diners will find the food delicious. More experienced diners such as myself may not “ooh” and “ahh” during the meal. While I did not taste a dish that really stood out or would leave a mark on my memory, all the food was well prepared and flavorful.

For me, the experience was more about watching the chefs at work. Seeing how much effort went into each plate, just to get the dish plated and ready to serve, was entertaining to me. I also interacted with the chefs quite a bit and they encourage questions and dialogue. I appreciated this about the experience. I was able to ask about their experiences, how much effort went into each dish (and the entire menu), etc. I even asked a question about how may individual elements went into the evening which stumped the chefs but they were determined to get an answer so they went and counted everything to come up with a total.

And so, while the food may not leave a lasting impression on me, the overall experience will.
