Work took me to Las Vegas for the first time in almost a decade. While the days were busy, I was fortunate to find some late reservations at a couple of restaurants I’ve had my eye on. First up on my short visit was ITO at the new Fountainbleau Las Vegas hotel. The second location for Chef Masashi Ito, with his first being in NYC, ITO at the Fountainbleau is tucked away in a back room of the exclusive Poodle Room bar at the top floor of the hotel. The restaurant is counter-only with 10 seats and just two seatings per evening.

Much like the NYC location, ITO serves an omakase menu focused on seasonal ingredients. Most of what we were served came from Japan, with a few exceptions. Here is what I had for dinner on October 7, 2025:

Sea bream with daikon and ponzu

Broiled fish with pumpkin miso and fried enoki

Fish with nori dashi soy

Ikura, caviar, and ikura served over sushi rice

Fish meatball served in fish broth

Negitoro handroll with chive

Dessert

Otoro collar (okonomi)

Wagyu uni handroll (okonomi)

The current per person cost of ITO is $400. All the items above except for two nigiri (toro collar and nodoguro) and the wagyu uni handroll were part of the standard offering. Like make omakase settings, ITO does offer a selection of okonomi (ala carte) items which you can add to the end of the course menu.

So the question I got bombarded with on Instagram… was it worth it? Yes and no. If we’re talking strictly about the food, ITO delivers a quality omakase experience with good ingredients from Japan… but not to the same level of deliciousness as other omakase at this price point. Sushi Sho is a little lower in price and has better food.

However, ITO is unique in its location (88th floor of a luxury hotel) and dining here does give you access to the exclusive bar in the hotel (Poodle Room) which would otherwise be inaccessible for most. If you place value in those two things, the the overall “worth it” calculation may be higher for you.
